Wild Mushroom and Walnut Stuffing

Festive accompaniment to the Roast beef with kumquats, or any roast made with dried porcini mushrooms and pickled walnuts

Ingredients

  • 25g/1oz dried porcini mushrooms
  • 3-4 pickled walnuts, rinsed, drained and roughly chopped
  • 100g/4oz fresh white breadcrumbs
  • 30-45ml/2-3tbsp freshly chopped flat-leaf parsley
  • 2 garlic cloves, peeled and finely chopped
  • Salt and freshly milled black pepper
  • 1 egg yolk, beaten
