This recipe is a mix of two cooking methods - traditional roasting and pot-roasting. The beef tastes wonderful and benefits from cooking in beer - it smells fantastic too!
To Cook Rare: 20 minutes per 450g plus 20 minutes
To Cook Medium: 25 minutes per 450g plus 25 minutes
To Cook Well Done: 30 minutes per 450g plus 30 minutes
Average Cooking Time for 3lb: 0 Minutes
Calculate the cooking time for the beef joint. Line a roasting tin with foil and place 2 red onions, sliced, onto the foil placing the beef joint on top. Pour over the half the beer or stout and cook in a preheated oven for the preferred, calculated cooking time.
Halfway through top the liquid up with the remaining beer or stout and loosely wrap the beef.
